MySommelier Wine Pairing Questions
Does Chef Vivant provide wine pairings?
Yes! With the Chef Vivant “MySommelier” feature on the navigation column (left-blue) of your MyLibrary screen, you can pair wine with a recipe, or pair a recipe with wine. Just click on “Wine to Recipe” or “Recipe to Wine” and Chef Vivant will provide you with a set of information to fill to determine your proper wine-recipe pairing.
What do I do if I’m not getting a pairing?
There are a few ways to solve this problem: 1. If you are entering a preparation, erase it and enter the sauce and/or main ingredient in the sauce in the “modifiers” fields and you should get a result. 2. If you are entering many of the sub-fields (ie. Preparation, sauce, etc…) clear those fields and see the result at the top of the list for best pairing. Perhaps the recipe has expanded beyond conventional pairing logistics (this means that you are more avant garde than we’ve given you credit for). By deleting some of your entries, you should find a suitable pairing. 3. Also, try changing the course from appetizer to entrée or vice versa.
The pairing algorithm is giving me too many results. What should I do?
The top of the list always is the best pairing. You can also limit the results in some cases by adding more of the sub-fields in the lower line of options. Best to add one at a time and click on the Wine Pairing Search button.
I’m not getting many results from my search. How can I get more results?
Simplify your input, start with the basic main ingredient and see what you get. As you add items in the sub-modifier fields make sure they are key ingredients that affect the dominant flavor of the dish but remember in many cases there will only be one or two likely pairings.
I can’t find the main item, preparation, sauce or ingredient I want to input. What should I do?
Look in a different field. If you are looking for a cherry red wine sauce you can enter red wine as the sauce and cherry as a modifier for example. Perhaps also there is another name in the culinary world that the item you are looking for goes by.
